Founded in 1970, the Ihara factory is operated by the Mwirua Farmers Cooperative Society. The Coopertive has only 500 active members who contribute to this mill. Each farmer owns about 1/8th of a hectare of land, and deliver their coffee in cherry form to the mill for sorting and processing. Once it's received, it's fermented underwater for 16–23 hours, washed three times, and dried on raised beds for 6–15 days.
