5% of coffee cherries will produce only one

seed, which is known as a peaberry for its

spherical, pea-like appearance. The coffee from

Kariru Coffee Factory in Kirinyaga, Kenya, was

hand sorted after harvest, and this lot consists

of 100% peaberries, from SL28 and SL34 variety

coffee trees. The peaberries are pulped and

processed using water from the nearby Kamweti

River, and the parchment is then laid out on

raised beds to dry. The result is a clean cup,
